Macademia Nut, Cacao pudding

Sublime pudding

Serves four

Ingredients:

2 cups raw Macadamia nuts or cashews
Filtered water
1/4 cup Maple syrup
Cinnamon (optional)
1-2 tablespoons raw Cacao powder or Carob

Instructions:

Place nuts in a glass bowl and cover with filtered water, leaving to soak for 4 to 24 hours. Rinse well. Put all ingredients in a food processor, or a Vita-Mix blender and blend. Pour into glass jars or glasses and refrigerate, serving chilled.

Inspiration and nutrition:

There is a raw dessert that is made locally, here in Portland. It is sold at the local co-ops that I shop at, and the dessert is sublime. It is a raw cashew pudding made by a small company called Pixie Retreat. Their dessert motivated me to make this pudding. Not to mention the added nutritional benefits of macadamia nuts.

Macadamia nuts contain significant amounts of fiber which helps the movement of food through the digestive tract as well as protein and B-vitamins that are easy to digest.
